Hungarian Pork Stew

Tender chunks of pork simmered in paprika gravy with onions and vegetables.

Ingredients - pork shoulder, onion, paprika, caraway seed, broth, carrots, parsley

Cut pork into 1-inch chunks and season with salt and pepper.

Brown pork pieces well on all sides in batches in hot oil. Remove and set aside.

Sauté onion and deglaze pan with broth, scraping up browned bits.

Return pork and add more broth to cover. Stir in paprika and caraway.

Simmer 1-2 hours until pork is very tender. Add carrots halfway through.

Serve porkolt stew over broad egg noodles or spätzle. Garnish with parsley.

Adjust paprika amount to preference. Stir in sour cream just before serving.
