Chile Colorado

Tender chunks of beef simmered in a deep red ancho chili sauce.

Ingredients - Beef chuck, ancho chilies, tomatoes, garlic, spices, onion, broth

Sear cubed beef chuck in batches until well browned on all sides. Set aside.

Sauté onion, then add ancho chilies and spices. Cook for 2 minutes.

Add tomatoes, beef broth, garlic and seared beef. Simmer for 2+ hours.

Shred ancho chilies into the sauce until smooth and thickened to coat the meat.

Taste and season stew with more cumin, oregano to preference.

Serve chile Colorado stew over rice, stuffed into enchiladas or burritos.

Garnish with queso fresco, cilantro. Great leftovers too! Adjust heat with extras chilies.

Stir in some beer or tequila for more depth. Works with pork or chicken too.
